
Introducing my version of a Filipino curry called bicol express. I can’t remember the last time I’ve had it but I’ve been craving it for the last week so I finally gave in. It’s not the healthiest meal but sometimes you have to treat yourself. Sometimes food cravings just get the best of me.
The base of this curry is coconut milk and if you like spicy, then this is for you. I’m personally a huge fan of spicy food and this was one of my childhood favourites. The sweet and spicy combination are just dynamite. I’ve learned a lot in the kitchen from my parents and this is one those dishes that reminds me of them. There is a lot of variations to this dish, and I’ve tried many of them. This version of combination of the ones I tried. I’ve kind of put my own little twist on it without ruining the integrity of the dish. It’s a very hearty dish that is cheap to make for a student on a budget. The dish consists of:
- pork shoulder
- sautéed shrimp paste
- onion
- garlic
- ginger
- lemon
- black pepper
- mushroom
- red thai clili peppers
